A church is visible in one of the Animus fissures - this is the Church of St. Lawrence in Nuremberg, Germany.Its construction began in the 13th century, and it acquired its modern appearance (and image in the game) in the 15th century.

So, it seems that Assassin’s Creed Hexe will take place somewhere in the 15th–17th centuries - the “heyday of witchcraft” in Germany falls precisely in the first half of the 17th century, during the Thirty Years’ War, when famine and epidemics were attributed to “the tricks of witches.”
